Usually fresh methi (fenugreek) leaves is sold when fully mature at Indian stores here. I love to use fresh baby methi leaves, they have a delicate taste unlike the mature leaves. So come spring/summer, I sow some methi seeds and they sprout up into tender baby leaves in just a few weeks time for me to cook and enjoy them as I fancy.
